If baklava is the dessert everyone knows, şöbiyet is the one the regulars order. Our 400g box is made to order with 100% butter and natural beet sugar, cooked over a wood fire and finished with a syrup that contains no glucose or corn syrup at all.
So What Exactly Is Şöbiyet?
Think of it as a richer, softer cousin of baklava. The same paper-thin pastry is used, but instead of being stacked in a tray and cut into squares, it is folded into neat triangles around two fillings at once: a layer of smooth, milky cream and a generous helping of ground Antep pistachio. That makes it a true cream-filled baklava, with a gentle, almost custard-like centre that melts against the crunch of the pastry.
Şöbiyet is closely tied to Gaziantep, the city most Turks would name as the home of great baklava. Today it is a fixture of every serious baklava shop in the country, usually sold by the slice alongside classic squares and carrot slices, and it is often the piece that disappears first from a mixed platter. Once you have tried the combination of warm butter, soft cream and toasted pistachio, it is easy to see why.
Why Ingredients Matter Here
With a dessert this simple, there is nowhere for poor ingredients to hide. Many commercial producers swap butter for cheaper fats and sweeten the syrup with glucose, which makes the pastry greasy and the finish cloying. We do the opposite.
- Made with 100% butter for a clean, rich flavour
- Syrup prepared with natural beet sugar
- No glucose or corn syrup
- Generous Antep pistachio in every piece
- Baked over a wood fire for an even, golden finish
That commitment to real butter is what gives a proper butter baklava its aroma. You will notice it as soon as you open the box.
Serving Suggestions
Şöbiyet is at its best at room temperature, when the cream is soft and the pastry still crisp. A kilogram usually yields around 14 to 16 slices, so this box gives you roughly six generous pieces. Serve them on a small plate with Turkish coffee or a tulip glass of black tea, ideally after a long lunch when everyone is ready for something sweet but not heavy.
It also makes a thoughtful gift. Arrive at a family visit, an engagement or an Eid gathering with a box of şöbiyet and you will be remembered for it.
Storage
Because of the cream filling, keep the box in a cool place and enjoy within a couple of days. If your kitchen is warm, a short spell in the fridge is fine, but let the pieces return to room temperature before serving so the butter and cream can soften again. Contains wheat, milk and nuts.
