Midye means mussel in Turkish, and one look at a tray of midye baklava explains the name. Each piece is folded into a little shell shape, open at the top to show off a heap of bright green Antep pistachio, and baked until the edges turn crisp and golden. Our 400g box is made to order, so it reaches you with the pastry still light and crackly.
Why Midye Baklava Looks So Different
Most people picture baklava as neat squares or diamonds cut from a large tray. The mussel shape is a little more theatrical. Bakers in Gaziantep developed it as a way to show the filling rather than hide it, rolling thin pastry around a generous spoonful of pistachio and pinching one end so the nuts spill out like a pearl in an oyster. It is one of the shapes people reach for first on a mixed platter, simply because it looks so inviting.
The open top changes the eating experience too. More pistachio is exposed to the heat of the oven, so it toasts slightly and gains a deeper, nuttier flavour. The folded pastry underneath stays crisp while the syrup gathers in the curve of the shell.
What Makes It Special
A good mussel-shaped baklava depends on two things: very thin pastry and plenty of filling. If the pastry is too thick, the shell feels heavy and doughy. If the nuts are scarce, the shape looks hollow and disappointing. We fill every piece generously with finely ground Antep pistachio and keep the syrup light, so each bite tastes of nut and crisp pastry rather than sugar alone.

When to Serve It
In Turkey, a box of Turkish sweets is almost compulsory when visiting someone's home, and midye baklava is a favourite choice because it looks so special. It is equally welcome at Eid gatherings, engagement parties, birthday teas and long Sunday lunches. At home, try two pieces with a small cup of Turkish coffee, or plate them with a scoop of vanilla ice cream for an easy dessert that still feels like an occasion.
Storage Advice
Keep the box covered at room temperature in a cool, dry spot and enjoy within a few days. Refrigeration hardens the syrup and softens the pastry, so it is best avoided. If you would like to refresh the crunch, warm the pieces in a low oven for a few minutes and let them cool before serving.
