- Make a syrup by simmering sugar and water with a squeeze of lemon for around ten minutes, then leave it to cool completely.
- Melt plenty of butter. Clarified butter gives the crispest result.
- Brush a baking tray with butter and lay down a sheet of pastry. Brush it with butter and repeat until you have roughly half the sheets in the tray.
- Scatter a generous layer of finely chopped walnuts or pistachios over the pastry.
- Continue layering the remaining sheets on top, brushing each one with butter.
- Cut into squares or diamonds with a sharp knife before baking, going right through to the bottom.
- Bake in a moderate oven until deep golden and crisp, then immediately pour the cool syrup over the hot baklava.
- Leave it to rest for several hours, ideally overnight, so the syrup soaks in.
Tips for Working With Thin Pastry
- Let the pack come to room temperature before opening so the sheets do not crack.
- Cover the sheets you are not using with a clean, slightly damp tea towel.
- Do not worry if a sheet tears. Simply patch it in the middle layers where no one will see.
- Be generous with the butter, as it is what makes each layer crisp.
