In Turkey, nobody sits down to a meal without bread on the table, and the loaf most people reach for is Turkish somun bread. This single loaf from Günlük Fırın is made in line with orders each day, with a golden, crackly crust and a soft, airy crumb that is perfect for tearing, dipping and mopping up every last bit of sauce.
What Is Somun?
Somun is the everyday white loaf of Turkey, sold in bakeries on almost every street corner. It is usually oval with a single slash along the top, which opens up in the oven and gives the crust its characteristic ridge. Inside, the crumb is light and open, and the bread has a mild, slightly sweet flavour that works with just about anything.
Turkish families often buy it twice a day, once for breakfast and again in the late afternoon, because nothing compares with fresh bread still warm from the bakery. In many neighbourhoods the smell of somun coming out of the oven is one of the first signs that the day has started.
Made in Line With Orders
Unlike supermarket bread that is packed with preservatives to last a week, this loaf is baked daily in line with orders, so it arrives fresh rather than having sat on a shelf. You get a proper crusty loaf with a crackle when you squeeze it and a soft, springy middle, just like the bread you would buy from a Turkish fırın.
How to Enjoy Turkish Somun Bread
At Breakfast
Slice it thickly and serve with white cheese, olives, tomatoes, cucumber, honey and jam. Use it to scoop up menemen or to dip into the spiced oil left behind by sucuk and eggs. A Turkish breakfast without a basket of Turkish somun bread simply does not feel complete, and most families will happily get through a whole loaf between them on a slow weekend morning.
With Meals
Serve it alongside soups such as lentil or tarhana, bean stews, kebabs, köfte and salads. Turkish cooks love to use bread to soak up sauces, so tear off a piece and wipe the plate clean.
Sandwiches and Toasties
Split it lengthways and fill with grilled köfte, sliced sucuk, kaşar cheese or salad for a hearty lunch. It also makes excellent toast, especially when brushed with olive oil and griddled. Rub a cut clove of garlic over the hot toast and top with chopped tomato for a quick Mediterranean snack.
Keeping It Fresh
- Enjoy on the day of delivery for the crispest crust.
- Store in a paper bag or bread bin rather than plastic, which softens the crust.
- Refresh a day-old loaf by sprinkling it with a little water and warming it in a hot oven for a few minutes.
- Slice and freeze any leftovers, then toast straight from frozen.
